  • 2 1/2 lb (1.1 kg) russet potatoes, scrubbed and sliced 1/4 inch thick
  • 1 tablespoon nonstick spray or olive oil, for the slow cooker

For seasoning and finish

  • 1 packet (1 oz or 28 g) dry onion soup mix
  • 1/4 cup (60 ml) olive oil
  • 2 tablespoons water
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley, for serving

Instructions:

  1. Grease the slow cooker: Coat a 4-quart or larger slow cooker insert with nonstick spray or a thin layer of olive oil.
  2. Slice the potatoes: Scrub the potatoes and slice them into even 1/4-inch rounds. Pat them dry if they are very wet.
  3. Add the seasonings: Place the potatoes in the slow cooker. Sprinkle the onion soup mix, garlic powder, and black pepper over the top.
  4. Coat the potatoes: Drizzle with olive oil and water. Toss gently until the slices are evenly coated with seasoning.
