Ingredients:

  • 2 lb (900 g) boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 (16 oz / 450 g) bag frozen broccoli florets
  • 2 (10.5 oz / 298 g) cans condensed cream of chicken soup
  • 2 cups low-sodium chicken broth
  • 12 oz (340 g) wide egg noodles, uncooked
  • ½ tsp salt, or to taste
  • ½ tsp black pepper, or to taste
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried parsley
  • Fresh parsley, for garnish

Instructions:

  1. Add the chicken: Place the diced chicken evenly across the bottom of a 5–6 quart slow cooker. Season lightly with salt, black pepper, garlic powder, and onion powder.
  2. Add the broccoli: Spread the frozen broccoli florets evenly over the chicken. There’s no need to thaw the broccoli first.
  3. Make the creamy sauce: In a medium bowl, whisk together the cream of chicken soup and chicken broth until mostly smooth. Pour the mixture evenly over the chicken and broccoli. Do not stir at this stage.
  4. Cook the chicken and broccoli: Cover with the lid and cook on LOW for 4–5 hours or HIGH for 2½–3 hours, until the chicken is completely cooked through and tender and the broccoli is softened.
  5. Add the noodles: About 30–40 minutes before serving, stir everything together to distribute the chicken, broccoli, and creamy sauce. Add the uncooked egg noodles and gently press them down into the sauce so they are mostly submerged. If needed, add a small amount of extra broth or water until the noodles are just covered.
  6. Finish cooking: Cover and cook on HIGH for 25–35 minutes, stirring once halfway through. Cook just until the noodles are tender—avoid overcooking them.
  7. Final seasoning: Give the mixture a thorough stir and taste. Adjust the salt and black pepper as needed. Turn off the slow cooker and let the dish rest uncovered for about 5 minutes to allow the creamy sauce to thicken slightly.
  8. Serve: Garnish with fresh parsley and serve warm. For an extra-comforting meal, pair it with garlic bread, dinner rolls, or a crisp green salad.
