Ingredients:

  • 4 bone-in pork chops (about 1 inch thick, 2 to 2½ pounds total)
  • 2 large apples, cored and thinly sliced
  • 2 medium yellow onions, thinly sliced
  • 1 cup apple juice or apple cider

Optional for serving

  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Lightly coat the inside of the slow cooker with cooking spray or a small amount of oil to help prevent sticking and make cleanup easier.
  2. Arrange the sliced onions in an even layer across the bottom of the slow cooker, then spread the sliced apples over the onions. Place the pork chops on top, nestling them slightly into the fruit and onion mixture.
  3. Pour the apple juice or apple cider evenly over the pork chops, allowing the liquid to flow to the bottom of the slow cooker.
  4. Cover with the lid and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours, until the pork is tender and easily pulls away from the bone.
  5. Carefully transfer the pork chops to serving plates and spoon the softened apples, onions, and flavorful cooking juices over the top. Season with salt and freshly ground black pepper if desired, garnish with fresh parsley, and serve immediately.

Serving Suggestions:

Serve this comforting pork dish with creamy mashed potatoes, steamed white or brown rice, buttered egg noodles, or roasted potatoes. For a complete meal, pair it with roasted vegetables, green beans, glazed carrots, or a crisp garden salad. Warm dinner rolls or crusty bread are perfect for soaking up the delicious cooking juices.
